This is an update to my Spinach, tofu and chicken lasagna/bake post. I made this dish again about 2 weeks ago for my family in N.O. and it was a huge success. This time, I actually remembered to drain my chicken, tofu and veggie mix before adding the alfredo sauce. As I thought the dish came out to be more of a lasagna, but I actually prefer the way it came out the first time since it was so bubbly and juicy coming out of the oven then. So there you have it, both ways to cook the dish. Do with it what you may... :)
